Many Vietnamese cringe at the thought of consuming raw meat and snails worldwide. However, few realize that several dishes considered 'local delicacies' in our country can be equally terrifying for tourists.
Blood Pudding
With the belief in the magical nourishing properties of fresh blood, our ancestors ingeniously created a dish by coagulating the secretions of finely minced animals, mixed with fish sauce or diluted salt. Despite its proven nutritional benefits, this dish remains a challenge even for long-term foreign residents in Vietnam.

Medicinal Liquor
Medicinal liquor, also known as traditional ethnic liquor, refers to a variety of infused spirits prevalent in Vietnam's traditional culinary repertoire. Often touted as potent tonics or stamina boosters, these brews have become a distinctive feature of Vietnamese libations.

Traditional Vietnamese medicinal wine is often crafted from high-proof white liquor infused with various herbs or animal ingredients known for their therapeutic properties using ancient methods. Almost every household in Vietnam possesses a few bottles of medicinal wine, some aged for a considerable time. Despite a fondness for alcohol, many foreigners find the distinctive taste of this particular concoction challenging.
Cat meat
Pet owners in Vietnam live in constant fear of their beloved felines being stolen and ending up as a delicacy. This is the headline of an international article shedding light on the consumption of cat meat in Vietnam. Referred to as 'little tigers,' cat meat has been a long-standing indulgence for Vietnamese gentlemen.

At a modest restaurant in downtown Hanoi, patrons can easily order a lavish feast of meticulously prepared cat meat. The meat, devoid of fur and cut into small pieces, is ready for culinary transformations. The restaurant manager explains, 'Many people enjoy cat meat; it's a novelty, and they want to give it a try.
Animal organs
In Vietnam, animal organs are sometimes more expensive than regular food, a stark contrast to the Western practice of discarding them. With innovative cooking methods, foreign visitors are no longer repulsed by dishes featuring stomachs, hearts, or liver. It's not uncommon to see a Westerner relishing a plate of grilled intestines or a bowl of simmering organ soup.

Triumphant Essence
Triumphant Essence is prepared using an open charcoal fire and a well-seasoned pan (never a new one). All ingredients, including tenderloin, rump, heart, liver, and more, are added to the pan simultaneously and stir-fried in the style of 'horse fat frying horse' (using the natural fat present in the meat, no additional fat is added).

Once the meat edges turn golden, water is poured into the pan, and it simmers vigorously for hours. Triumphant Essence can be a challenging dish for many Vietnamese, making it truly an acquired taste for foreigners.
Dog meat
For foreigners, dogs are not just pets; they are cherished companions. Therefore, the idea of consuming the meat of their loyal friends is truly... unthinkable. It's not hard to notice the shocked expressions of international friends when Vietnamese dog meat is brought up.

Duck eggs, quail eggs (inverted)
Embarking on the list of the top 10 most bizarre dishes worldwide, it's no surprise this delicacy takes the lead. Foreigners can hardly fathom the idea of consuming an embryonic bird, not fully developed, by extinguishing its life 'right from within the egg.' A foreign traveler described the experience of eating balut as, 'Undeniably, balut is a challenging culinary adventure.'

Rat meat
Rat meat is not as favored by the Vietnamese as dog meat, but in many areas of the Red River Delta and the Mekong Delta, rats are widely sold as an essential ingredient for daily meals. Unlike some African countries where sewer rats are consumed, the rats used in Vietnamese cuisine are mostly field rats.

Insects
Various types of insects are processed into dishes in Vietnam, with coconut worm larvae being the most renowned, as some believe they are best enjoyed raw. The coconut worm is a type of caterpillar found in coconut trees, with a cylindrical body.

From the coconut worm, numerous dishes can be prepared, but coconut worm bathed in fish sauce is considered a popular dish. It is said to be most delicious when the daring eater fully embraces the flavors of a live squirming worm.
Durian
This tropical fruit is a favorite among many in Southern Vietnam. While hailed as the 'king of fruits,' foreigners often find tasting durian to be an extreme experience. For Western guests, it might result in wrinkled faces and nose-pinching due to its challenging aroma.

Various types of organ pins
Regarded as a tonic for men, various organ pins from animals are transformed into delectable dishes highly favored. Among them, beef organ pin is the most popular, considered a dish that 'husbands enjoy and wives praise,' as widely spoken in Vietnam.
