Red jellyfish is quite popular in Hanoi, although it originates from Hai Phong. Red jellyfish itself lacks flavor, so complementary ingredients bring essence to the dish. Eating red jellyfish is incomplete without pure shrimp paste, squeezed lime with bubbles, a few slices of red chili; grilled turmeric tofu (with yellow color), coconut flesh, and aromatic herbs like perilla, Vietnamese balm.
The jellyfish legs are usually crispy, while the body is soft and juicy. Eating jellyfish requires a specific technique. First, choose the largest perilla leaves to wrap the ingredients. Then layer perilla leaves, jellyfish, tofu, coconut, each in a piece. When everything is ready, skillfully wrap the perilla leaves around the filling and dip into the shrimp paste. The cool jellyfish, combined with the salty scent of shrimp paste, the fresh aroma of lime, the crunchy and fragrant coconut, and the aromatic turmeric and perilla leaves create a harmonious symphony of flavors.
Red jellyfish are not available year-round, but only during certain seasons. Typically around March, when the weather starts to heat up, you'll find jellyfish, lasting until around June or July, but not continuously.
