Braised fish is a familiar dish in every Vietnamese household, but each region has its own variation. With winter upon us, let's try the Southern-style braised fish with pineapple recipe! The sweet and tangy flavor of braised fish with pineapple, the tender fish infused with fat, combined with a thick, smooth, and sticky sauce, is simply irresistible!
The recipe is incredibly simple, let's get started together ^_^
Ingredients
- 2 slices of basa fish
- ¼ ripe pineapple
- Spring onions
- Purple onions
- Seasonings: fish sauce, sugar, salt, pepper.
Now let's dive into the steps to make braised fish with pineapple!
Step 1: First, let's dice the pineapple and add a teaspoon of sugar, then mix well.

Step 2: Clean the basa fish and marinate with 2 tablespoons of fish sauce, 1 teaspoon of salt, 1 teaspoon of sugar, thinly sliced purple onions. Let the fish marinate for 30 minutes to absorb the seasoning and firm up ^_^


The smaller the purple onions are sliced, the better, ladies!^_^
Step 3: Add 2 tablespoons of sugar and half a cup of water to a pot, turn on low heat and stir until the sugar water turns into a caramel color!

Once it turns brown, add a little cold water, then turn off the heat and mix well!
Step 4: Arrange the fish and pineapple in the pan, add some chili and mix well

Braise over low heat to ensure the fish is evenly cooked and absorbs the flavors...
Step 5: Braise until the water in the pot is almost evaporated and thickened, then sprinkle spring onions and pepper on top and turn off the heat!
