Smoked ham hock and ham are popular choices during Tet for entertaining guests due to their delightful taste and convenience. However, it's best not to keep these in the fridge. After marinating and processing, the sodium chloride content in smoked ham hock is relatively high. In the fridge, the water component in ham hock easily freezes, leading to oxidation of the fat. Oxidation has self-accelerating properties, potentially causing the smoked ham hock to turn sour. If you still want to refrigerate smoked ham hock, do so for a short period to prevent the fat from oxidizing.
The best way to store smoked ham hock is to hang it in a cool, shaded place with good ventilation. This not only prevents the dish from souring but also allows for long-term storage without degradation.
Raw, Unprocessed Meat

However, storing these fruits in the refrigerator can lead to sogginess and a loss of antioxidant properties. Thus, the fridge is not the optimal environment for preserving the freshness of watermelon.
