3. Step-by-step guide to making air fryer baked apple pies
- Step 1: Prepare the apples
After washing the apples, quarter them, removing the ends and core. Then, slice them thinly, about 2-3mm thick, ensuring the slices gradually get smaller so that when arranged on the pie, they form a dome resembling an apple. Keep them neat and tidy.
- Step 2: Glaze the apples
Arrange the apple slices in the air fryer basket. Sprinkle evenly with lemon juice, brown sugar, cinnamon powder, rum, and softened butter.
Cover the basket and cook on low heat for 8-12 minutes, depending on how soft or crispy you want the apples. After glazing, let them sit for half an hour to absorb the flavors.
- Step 3: Prepare the pie mold
Meanwhile, use a whiteboard marker to draw an apple shape on a piece of acrylic board (the kind used for document covers, available at photocopy shops). Use scissors to cut out the pie mold. Clean off any marker residue with alcohol to keep the mold clean for laying on the dough.
- Step 4: Shape the apple pie
The puff pastry has rested at room temperature. Place the acrylic mold on the pastry and gently cut the dough along the mold. Do not remove the mold from the dough; instead, lift the entire cut piece of dough with the mold intact and place it face down on a parchment-lined baking tray before removing the mold.
Next, attach the pastry stem and leaf onto the apple-shaped dough, ensuring they are firmly attached to prevent them from falling off during baking.
Then, use a sharp toothpick to press into the dough, gently pulling to create leaf veins. Use your fingertip to lightly press into the center of the apple to create a slight indentation, leaving the apple rim about 1cm thick.
- Step 5: Spread jam and place glazed apples on pastry
Mix apple jam with reserved apple juice from glazing. Use a brush to spread this mixture evenly over the entire surface of the pastry, including the stem and leaves.
Then gently remove each apple portion (each portion is ¼ of an apple) that has been sliced from large to small. Arrange the larger apple slices on the outer edge, gradually getting smaller towards the center to create a domed shape resembling a fresh apple.
Beat 1 chicken egg yolk with 2 tablespoons of fresh milk. Then, use a brush to spread this mixture on the edge of the pastry and let the pie rest before baking.
- Step 6: Bake the pie
Preheat the oven/air fryer to 200°C. Then reduce the temperature to 195°C and bake the apple pie for 15 minutes until evenly cooked and fragrant.
