Ingredients for Shrimp and Cashew Stir-Fry
- 250g medium-sized shrimp
- 1 1/4 tsp sugar
- 1/8 tsp baking soda
- 1/4 cup water
- 1/2 tsp sesame oil
- 1 tsp cornstarch
- salt and white pepper
- 4 stalks celery (cut at a 45-degree angle)
- 1/2 red bell pepper (sliced)
- 1 1/2 tbsp oil
- 2 slices ginger (minced)
- 1 spring onion (chopped)
- 2 tsp oyster sauce
- 3/4 cup roasted cashews
Step-by-Step Guide for Making Shrimp and Cashew Stir-Fry
Step 1. Prepare the shrimp
Mix shrimp with 1 tsp sugar, baking soda, and 1/4 cup water, gently combine everything for a few minutes.
Cover and refrigerate for 2 hours, then rinse under cold water for 5 minutes to wash off sugar and baking soda. Pat dry the shrimp with paper towels.
Marinate shrimp with 1/2 tsp sesame oil, 1 tsp cornstarch, 1/4 tsp salt, and a pinch of white pepper, then set aside while preparing the remaining ingredients.

Step 2. Prepare the other ingredients
To prevent overcooking the shrimp, blanch celery and red bell pepper first. Boil a pot of water, then add celery and red bell pepper, after 30 seconds, remove vegetables, briefly immerse in ice water. Drain completely and set aside.

If you only have raw cashews, you can roast them yourself. Roast them for about 10 minutes starting with a cold pan and medium-low heat. Add 1 tbsp oil and then the cashews. Roast the cashews for about 10 minutes, stirring frequently and carefully to avoid burning. Then spread them out and let them cool until ready to add to the dish.

Step 3. Sauté shrimp and ingredients
Heat 1/2 tbsp oil in a pan over medium heat. Add minced ginger and chopped spring onion, cook for 1 minute.
Then turn up the heat and add the shrimp. When the shrimp just starts to turn pink, add blanched celery and red bell pepper, along with 1/4 tsp sugar, oyster sauce, and cashews.
Mix everything well and season with salt and white pepper.
