- 250g thinly sliced chicken thigh meat
- 500g green beans
- 4 spring onions
- 2 cloves minced garlic
- 5 shiitake mushrooms
Marinade:
- 1 tablespoon water, 1 teaspoon vegetable oil, ½ tablespoon soy sauce, 1 tablespoon cornstarch
For Seasoning:
- 3 tablespoons vegetable oil, 2 tablespoons Thiệu Hưng wine, 2 tablespoons oyster sauce, 3/4 teaspoon salt, 1/4 teaspoon sesame oil, 1/8 teaspoon ground white pepper, 1/4 teaspoon MSG, 1 teaspoon cornstarch (dissolved in 2 teaspoons water)

Steps to Prepare Stir-Fried Chicken with Green Beans and Mushrooms
Step 1. Marinate the chicken

Next, wash the green beans thoroughly in a large bowl of cold water, soaking them for about 2-3 minutes to rehydrate. Drain the green beans in a colander.
Cut the spring onions in half lengthwise, then into 5-6cm pieces, separating the green and white parts.
Thinly slice the shiitake mushrooms.
Step 3. Stir-fry the chicken
Heat your pan over high heat until it starts to smoke, then spread 2 tablespoons of oil around the perimeter of the pan.
Add the chicken and use a spoon to spread it evenly across the pan. Stir-fry for about 1 minute until the chicken is cooked through, then transfer it to a separate plate.


Step 4. Stir-fry and combine the ingredients
Add a tablespoon of oil to the pan, along with the mushrooms and the white part of the spring onions. Stir-fry for 10 seconds and add the garlic.

You should keep the pan at the highest heat setting. Then add the green beans to stir-fry. Sprinkle Thiệu Hưng wine around the perimeter of the pan, and quickly stir everything else.

Then add sesame oil, salt, sesame oil, white pepper, and MSG.

Return the chicken to the pan, along with any liquid in the bowl and the green part of the spring onions. Stir-fry for an additional 10 seconds until everything is well combined, then stir in the cornstarch mixture.

Continue stirring for about 15 seconds until the green beans start to turn translucent. Turn off the heat.
