Guide on how to cook Southern-style rice wine at home
Step 1: Soak the sticky rice
Place the sticky rice in a clean basket, then gently rinse it about 2 times.
After molding, soak the rice in water, adding about 1 teaspoon of fine salt. Salt will enhance the savory taste of the rice, making it more appetizing and not bland. Let the rice soak for about 2 - 3 hours.
After soaking the sticky rice, drain it in a separate clean basket to prepare for cooking.

Step 2: Cook the sticky rice until done
To cook the sticky rice until done, put it in an electric rice cooker and add water as if cooking regular rice. However, when cooking rice for rice wine, make it slightly wetter than when cooking sticky rice. For every 350 grams of sticky rice, add about 170ml of water.
If you use too little water, the rice will become dry, lacking the moisture needed for fermentation, resulting in a lack of sourness. Conversely, if you cook it too watery, the rice will be soggy, making it less appealing when eaten.
The sticky rice cooked in the electric rice cooker should be done in about 20 - 25 minutes.

Step 3: Sprinkle sweet yeast on the sticky rice before fermenting
Once the sticky rice is cooked, spread it out on banana leaves and let it cool down a bit. Then, evenly sprinkle sweet yeast on the sticky rice.
Dissolve 100ml of boiled water to cool down + 1 teaspoon of rock salt.

Step 4: How to ferment rice wine
After moistening your hands with salted water prepared in step 4, mold the sticky rice balls that have been sprinkled with sweet yeast. When molding the rice balls, you can use a small piece of banana leaf wrapped around the stem to make the rice wine fragrant with the scent of banana leaves.
After molding, sprinkle a few drops of salted water on each rice ball. Then, arrange the rice wine balls in containers such as clay pots, porcelain jars, or glass jars and cover tightly. After 3 days, it will be ready to enjoy. You can enjoy the fermented rice with sponge cake or steamed sticky rice, both are delicious.

The process of making Southern rice wine is really simple, isn't it? Give it a try. Good luck to you all.
