Ingredients for making handheld seafood tofu:
Shrimp: 100g (4 – 5 pieces)
Scallops: 30g
Young tofu: 100g
Soybean pods: 100g
Mushrooms: 50g; Carrot: 1 small; Baby corn: 50g
White wine: ½ tablespoon, cornstarch: 1 small tablespoon, chili, garlic, ginger, green onions
Seasonings: salt, seasoning powder, sugar
How to make seafood tofu:
Step 1:
-Clean rock shrimp, peel, remove shrimp heads, and the black vein on the back.

-Clean baby corn, slice thinly.
-Clean various types of shiitake mushrooms, carrots, and baby corn. Peel and cut the carrot into flower shapes; remove stems from shiitake mushrooms, and cut baby corn in half.
-Clean and slice ginger. Peel and crush garlic. Wash and finely chop green onions.
Step 2:
-Cut tofu into square pieces, deep-fry until crispy. Remove tofu and place it on paper towels to drain excess oil.

-Drain excess cooking oil from the pan used to fry tofu. Reheat the pan and stir-fry carrots, ginger, and baby corn for 1 minute. Add garlic and shiitake mushrooms to the pan and stir-fry for an additional 1 minute, then turn off the heat.
-Heat a wok with a handle, add cooking oil, and sauté the green onions until fragrant. Add the scallops to the wok, stir well for about 2 minutes until the scallops are cooked and golden.
Step 3:
-Add water and ½ tablespoon of white wine to the wok, simmer on low heat until the soup thickens. Then, add the sautéed vegetables and shrimp to the wok. When the shrimp are just cooked, slowly add cornstarch to the wok, stirring well.
-Finally, add the fried tofu and shiitake mushrooms to the wok. Cover the wok and simmer on low heat for 1 minute. Season to taste, then turn off the heat and serve the dish.
