Spring rolls (fried rolls) are a traditional Vietnamese dish, not only simple and convenient but also incredibly tasty. Today, instead of the usual spring rolls, let me introduce you to how to make shrimp spring rolls for a change. These crispy shrimp spring rolls, with the blend of meat and shrimp flavors, will make your weekend family meal even more cozy and delicious.
Ingredients:
- 300 grams of ground pork
- 300 grams of large, high-quality shrimp
- 2 eggs
- 1 carrot
- 4 pieces of shiitake mushrooms
- 50 grams of bean thread noodles
- 50 grams of spring onions
- 1 packet of rice paper wrappers
- Seasonings: bouillon powder, pepper, salt, cooking oil
How to Make Shrimp Spring Rolls:
- Soak shiitake mushrooms in warm water, when they expand, wash them thoroughly, and cut into long, thin strips.
- Peel the carrots, julienne them, finely chop the spring onions.
- Rinse the bean thread noodles, drain them, cut them short about 2-3cm (no need to soften).

- Place the meat in a large bowl with spring onions, shiitake mushrooms, bean thread noodles, season with 2 tablespoons of bouillon powder, 1 tablespoon of pepper, and crack 2 eggs into the bowl. Mix well with gloves to marinate the meat.

- Peel the shrimp, remove the black vein along the back and belly of the shrimp, rinse well, then season with ½ teaspoon of salt, a pinch of pepper, and toss the shrimp evenly.

- After the meat is marinated, take each rice paper wrapper, add a portion of the meat filling, and fold it back, adding one shrimp to each roll. Remember to leave the tail of the shrimp exposed outside so it will look beautiful when fried.

- Continue wrapping until all the meat and shrimp filling is used up.

- Place a pan on the stove, add 2 cups of cooking oil, wait for the oil to heat up, then fry each spring roll until golden. Then, remove and drain the excess oil.

- Finally, arrange the shrimp and meat spring rolls on a plate, garnish if desired, and start enjoying.
