Ingredients:
Dough Section
- All-purpose flour: 150 grams
- 1/2 teaspoon salt, 1/2 teaspoon sugar
- Assorted seafood: fresh squid, shrimp, clams, mussels, each 100 grams
- 2 eggs
- Scallions, cilantro, fresh chili peppers, vinegar, white wine, minced garlic
Dipping Sauce Section
- 3 tablespoons soy sauce
- 2 teaspoons vinegar
- Toasted sesame seeds, granulated sugar, finely chopped shallots

How to Make Seafood Pancakes:
Step 1:
- Peel the shrimp, clean the squid, rinse, and cut into small pieces. Blanch them in boiling water with white wine, then remove and drain.
- Clean the clams and mussels, steam until cooked, then remove the meat and also chop finely. Remember to reserve all the broth from steaming the shrimp, squid, clams, and mussels.
- Slice the chili lengthwise, remove the seeds, and finely chop.
- Mix the flour with 1 teaspoon vinegar, 1 teaspoon minced garlic, 1 teaspoon sugar, and 2 teaspoons salt. Add the seafood broth and mix until smooth and slightly thin.
- Wash and clean the scallions and chives, then cut them into long pieces about 10cm in length.
- Crack the chicken eggs into a bowl, beat until well mixed.
Step 2:
- Heat a pan on the stove, place the scallions and chives on the surface of the pan greased lightly with oil.
- Wait for the oil to heat up, then spread a layer of batter over the scallions.
- Continue to arrange the seafood pieces along with finely chopped fresh chili peppers on top of the batter.

- Pour 1/3 of the beaten eggs over the seafood section.
- Cover the skillet tightly, cook over low heat for about 15 - 20 minutes, then flip the pancake from the bottom to the top to ensure even browning.

Step 3:
- Add 3 tablespoons of soy sauce, 2 tablespoons of vinegar, 1 tablespoon of toasted sesame seeds, 1 tablespoon of sugar, and a little finely chopped scallions into a small bowl, mix well.
- Cut the evenly golden pancakes into small pieces and serve with the prepared dipping sauce.
