2. Guide on Making Tofu with a Blender
Step 1: Soak Soybeans
Purchase soybeans, wash them, then soak in water. Soak for 6 to 8 hours. Adequate soaking facilitates easier grinding and higher soy milk yield.
You can save time by soaking soybeans overnight. Then, you just need to start and process them.
Step 2: Grind Soybeans
After soaking overnight, soybeans may become sour. Therefore, after grinding freshly, soak them and rinse once with clean water. Just one gentle rinse is enough. It's unnecessary to rub the beans to remove the skins. Then, pour the beans into a large basket and grind.
Pour soybeans and water into a blender, then blend until smooth. You can blend at low speed for about a minute. Then, adjust to high speed, grinding the beans for another one to two minutes until smooth.
Step 3: Strain the soybean pulp
Prepare a deep pot and place a cheesecloth on top to strain the soybean pulp. Slowly pour the soybeans to separate the soy milk and pulp. Then, strain the soy milk two more times to remove all the settling pulp.
Repeatedly straining the soybean pulp several times will separate the soy milk from the pulp. You can make fried tofu from soybean pulp. Soybean pulp can also be used as ingredients for baking or animal feed, or fertilizer for plants.
Step 4: Cook the tofu
After filtering the soy milk, put it in a pot to boil. Soy milk, after removing the residue, is the main ingredient for making tofu or soy milk, tofu pudding.
Adjust the cooking temperature of the soy milk to simmer gently without boiling vigorously. After the milk boils, simmer it gently for about 3 to 4 minutes to ensure the beans are cooked and smooth.
Step 5: Make tofu coagulant
This is a crucial step, indispensable in the process of making tofu. This is also a 'precipitation reaction' if described in terms of science through a catalyst. In this case, the catalyst is acidic water.
The formula for acidic water will be: white vinegar, water, and salt in a ratio of 1:5:2. Where 1 liter of water, 5 teaspoons of white vinegar, and 2 teaspoons of salt.
Turn off the soy milk pot and pour the acidic water into the pot. Gently stir with a spoon to distribute the milk evenly throughout the pot. Cover the pot for about 10 seconds, then pour in the acidic water and continue stirring until the beans coagulate.
Step 6: Mold pressing
Place a cheesecloth in the mold, then scoop the hot tofu from the pot into it and press tightly. Let it sit for 1 hour before removing. Cut the tofu into bite-sized pieces and store in a container with diluted salt. Store these in the refrigerator compartment for up to a week.
