Vegan stir-fried tofu recipe - Crispy tofu combined with vegetables, cashews, scallions, and rice! A healthy main dish, rich in protein and quick to prepare!


Tofu provides a good amount of protein, making it a great choice for a healthy and balanced lunch or dinner. Vegan tofu stir-fry with ginger, lemongrass, and flavorful sauce brings a wonderful taste comparable to meat dishes. Broccoli, carrots, and bell peppers are the accompanying vegetables, but you can freely customize according to your preferences.

INGREDIENTS FOR VEGAN STIR-FRIED TOFU
• 200g firm tofu
• 200g broccoli, chopped
• 1 carrot, thinly sliced
• 1 red bell pepper, thinly sliced
• 2 stalks lemongrass, finely chopped
• 2 sprigs of green onions, finely chopped
• 40g crushed roasted cashews
• ½ tablespoon soy sauce
• 1 teaspoon sesame oil
• 1 tablespoon oil
• 2 tablespoons minced ginger
Stir-fry Sauce
• 1 tablespoon brown sugar, 3 tablespoons soy sauce, 1 tablespoon sweet soy sauce, 1 teaspoon lime juice, 1 teaspoon cornstarch

STEPS TO MAKE VEGAN STIR-FRIED TOFU
Step 1. Fry the tofu
Pat dry the tofu with paper towels. Cut into square pieces and toss with soy sauce and sesame oil in a small bowl.
Heat a skillet with 1 tablespoon of oil and fry the tofu for 5 minutes, flipping occasionally. Set aside.

Step 2. Sautéing the ingredients
Add 1 tablespoon of oil, ginger, and lemongrass to the skillet, sauté for 2 minutes. Add broccoli, carrots, and bell pepper, sauté for 5 minutes over medium heat.

Mix all sauce ingredients in a small bowl. Add tofu to the skillet then pour the sauce over, toss to coat evenly.

Cook for a few more minutes until the sauce thickens slightly. Add cashews and green onions, stir-fry together. Turn off the heat.

Step 3. Presentation
Transfer the stir-fried tofu to a serving plate, optionally sprinkle with sliced chili and sesame seeds on top. Serve with hot rice.
