Guide to preparing authentic Korean-style seafood kimchi hot pot, fragrant and rich in flavor

Ingredients
– Shrimp, squid, clams, fish cakes (choose your favorite seafood)
– 3 sausages, 300g Korean kimchi, fried tofu
– Spice it up with salt, fish sauce, sugar, seasoning powder, sliced scallions, sliced horn pepper, 2 tomatoes, 2 minced garlic cloves, 1 finely chopped purple onion.
– Hotpot veggies: Kimchi mushrooms, fresh shiitake mushrooms, coriander, chrysanthemum greens, water spinach... choose your favorite greens according to your taste.
– Instant noodles or fresh rice vermicelli
Preparation steps for ingredients
– Clean the squid, shrimp, and octopus thoroughly. Slice the squid thinly, about the width of a finger joint, avoid cutting too small as it will be challenging to pick up in the hotpot.
– Cut sausages into pieces, slice fish cakes
– Thinly slice shiitake mushrooms, and cut tomatoes and taro into bite-sized pieces.
– Trim the roots of enoki mushrooms, wash them thoroughly and let them dry.
– Clean and drain leafy greens.
Steps for preparing seafood kimchi hotpot
– Crush the garlic and sauté it with 2 small spoonfuls of cooking oil.
– Stir-fry the kimchi for about 4 – 5 minutes.
– Pour 3 bowls of water into the pot after stir-frying the kimchi, then add mushrooms. When it boils, add seafood ingredients such as squid, octopus, shrimp, fish cakes, and sausages. Cook for a few more minutes. Season with salt and pepper to taste, then turn off the heat.
– Remove the pot, dip various vegetables and kimchi mushrooms slowly. The hot pot must always be kept hot when eating.

Some notes
– This seafood kimchi hot pot does not require using bones to make broth, but if families prefer, they can boil bone broth.
– To use bone broth, buy 500g of marrow bones, clean and parboil. Discard the boiling water. Marinate the bones with seasoning, salt, sugar, and let it sit for 30 minutes. Put it on the stove, turn it over until the bones firm up, pour water in, and simmer for 60 minutes for delicious bone broth.
