For 25 years, the owner has upheld the habit of sitting at the entrance, observing customers entering and leaving to determine if they've enjoyed their meal.
Hanoi Bun Cha Spot's 25-Year Presence in Saigon
The eatery is situated on Nguyen Cong Tru Street, District 1, which has been the residence of Cuong's family since they arrived in Saigon in the 90s. According to Cuong (born in 1971), this Bun Cha spot has been operating for a solid 25 years.

Bun Cha is a familiar dish from Hanoi. Cuong reminisces how his family brought the recipe from Hang Thiec, Hanoi, to Saigon. 'We strive to maintain the authentic taste to serve customers who have yet to enjoy it,' says Cuong, the owner.
Pork meat, both lean and fatty, is evenly marinated according to a traditional recipe before being grilled. Prior to this, Cuong's family would go to the market early, procure fresh ingredients, and prepare to open at 7 a.m. Bun Cha, grilled meat served with fresh vegetables, sweet and sour fish sauce, papaya, and carrots.
Grilled meat and pork patties are served in small bowls rather than large ones as commonly seen in Hanoi. Fine rice vermicelli, pure white, served in small plates. Fresh vegetables are served alongside in large plates.

The success of the dish relies heavily on fish sauce. Various spices are carefully measured to create a rich flavor profile, leaving a lasting impression on every customer who tries it.
Huy Duong, a customer from Hanoi, remarked that perhaps due to being served in bowls, the fish sauce is less than the original version. 'The fish sauce seems a bit salty for my taste, but the meal is hearty and reasonably priced,' said Duong.
The eatery is located on a central city street, with modest space. Customers seated at tables will be attended to by staff, who are also family members of Mr. Cuong, taking orders. The eatery primarily serves bun cha, with additional offerings of bun thang and bun moc in the morning.
