1. Steamed clams with lemongrass
Steamed clams with lemongrass are easy to prepare yet equally tantalizing. Ingredients include clams, lemongrass, fresh chili, and salt. Simply add prepped clams and lemongrass into a pot with 300ml water, ½ teaspoon salt. Boil for about 10 minutes until clams open and emit a fragrant aroma, then add fresh chili for a delightful treat.
2. Grilled golden threadfin fish
Most men enjoy the sweet, chewy, oceanic flavor of grilled squid, but this Father's Day falls on the first day of the fifth lunar month (June 18th in the Gregorian calendar), during which many abstain from dishes like dog meat, squid, shrimp, etc. Instead, you can opt for grilled golden threadfin fish as a snack option.
To ensure delicious golden threadfin fish, choose evenly sized fish with light yellow, bright colors, white on the back, red on the belly, and a scent of the sea.
After washing the fish thoroughly, place it in an oil-free frying pan. Set the temperature to 160°C and grill for about 3 minutes on each side until ready to serve. For a crispier texture, lightly spray or brush a thin layer of oil on both sides of the fish before grilling.
2. Steamed beer fish
Steamed beer fish serves as both a snack for the gentlemen and a savory dish providing nutrients for the whole family. The advantage of steamed beer fish is its refreshing taste suitable for hot summer weather. Additionally, the ingredients are easy to find and fresh. When cooked, the sweet taste of the fish combined with the aromatic flavor of beer is truly appetizing.
You'll need fish (grass carp, tilapia, crucian carp, etc., depending on preference), MSG, salt, scallions, ginger, garlic, lemongrass, celery, beer, cooking oil, etc.
Prepare and clean the fish, along with the accompanying ingredients, then proceed to marinate. Marinate the fish with salt, seasoning powder, MSG, lemongrass, ginger, all finely chopped, mix well, and let it sit for about 30 minutes for the fish to absorb the seasoning evenly. Make sure to evenly spread and stuff the seasoning into the fish cuts and inside the belly for better seasoning absorption.
Next, use lemongrass and ginger to line the bottom of the pot, place the fish on top, then pour beer to cover the lemongrass, steam for about 10-15 minutes until the meat is cooked through. Add spring onions and coriander to the steamer for an additional 3-5 minutes to enhance the aroma and minimize fishy smell. Steamed beer fish pairs perfectly with rice paper, served with chili garlic fish sauce.
4. Five-spice roasted quails
While steamed beer fish offers a refreshing taste, roasted quails boast a rich and savory flavor that becomes increasingly irresistible with every bite. To impress on Father's Day, you'll need quails, ginger, garlic, onions, sugar, five-spice powder, salt, cornstarch, soy sauce, white wine, etc. Delicious quails often have a light pinkish hue on the skin, slightly bright in color, and no unpleasant odor. Choose female quails for their richer, more tender, and fragrant meat.
Method: Prep ingredients, clean and debone quail. Then, boil quails with 2 teaspoons of five-spice powder, 5g of ginger, 10g of garlic, 2 tablespoons of sugar, 2 tablespoons of white wine, cornstarch, 1 tablespoon of salt, soy sauce, for about 15 minutes. Before frying, soak quails in ice water for 5 minutes for a crispy texture.
Marinate quails with 40g of cornstarch, 1 tablespoon of vinegar, 1 tablespoon of white wine, 1 tablespoon of soy sauce, 2 tablespoons of water, and ½ tablespoon of cornstarch for 10 minutes. Once drained, they are ready to fry. The dish is perfect when the meat is tender, golden brown, visually appealing, with a rich aroma of five-spice powder.
5. Sweet and sour chicken feet
Sweet and sour deboned chicken feet are an excellent relief on hot days. Ingredients include chicken feet, carrots, garlic, ginger, sugar, vinegar, salt, and white wine. After prep, clean the ingredients, boil chicken feet with ginger, white wine, salt for 10 minutes then soak in cold water, proceed to debone.
Next, prepare the marinade for chicken feet using vinegar, sugar, and salt. Mix chicken feet with garlic, carrots, shallots, and the marinade for 3-4 hours to absorb flavors evenly. Sweet and sour chicken feet easily become addictive with their refreshing, crispy texture, rich, savory taste of chicken feet, combined with aromatic spices.
