- Onion: 1/2 bulb
- Minced chili: 1/2 teaspoon
- Lime: 3 fruits
- Crushed roasted peanuts: 100 grams
- Seasoning: 3 tablespoons granulated sugar, ½ teaspoon MSG, 2 tablespoons fish sauce, 20 grams finely chopped and squeezed coriander stems.
How to make pig intestine salad:
Step 1: Prepare pig intestines
- Clean the pig intestines by turning the inner surface outward and using a sharp knife to scrape off the inner membrane thoroughly. Then rinse directly under strong running water and squeeze well with salt to remove all the slime.
- Blanch the intestines in a pot of boiling water and then remove them. Use lime to rub all over the intestines. Next, turn the intestines inside out and cut off the outer layer of fat. This way, our intestines are completely clean and odor-free.
- Place a pot of water seasoned with 1 teaspoon of salt and 1 teaspoon of fish sauce on the stove, bring to a boil, then add the intestines and boil until cooked. Remove and soak in a bowl of cold water with a few ice cubes for about 10 minutes to make the intestines crispy.

Step 2: Prepare other ingredients
- Clean the lotus stems, cut into sections, split lengthwise, and soak in cold water. Squeeze 1 lime into a bowl of lotus stems, soak for about 10 minutes, then remove and drain.
- Wash the carrots, peel, and slice thinly.
- Peel and wash the onions, then slice thinly and soak in a bowl of cold water with a little sugar added for about 10 minutes to reduce the pungent smell of the onions.
Step 3: Mix the ingredients
- Put all the seasonings including sugar, MSG, fish sauce, and coriander into a pot and stir well while cooking until the sugar and MSG are completely dissolved.
