2. Simple Method for Rice Roll Preparation
Making Rice Rolls
You combine rice flour, tapioca flour, 1 teaspoon of vegetable oil, and ¼ teaspoon of salt in a large bowl. Pour 500ml of water according to the prepared flour ratio, stir well to form the rice cake batter.

Note: You can also use pre-mixed flour bought at grocery stores or supermarkets. Pre-mixed flour is more convenient. If unavailable, you can follow the recipe above!
Preparing Rice Roll Filling
First, finely chop the meat and marinate it with some seasoning powder and black pepper. Then, finely chop the shallots, heat a little vegetable oil in a pan, sauté the shallots until fragrant. Next, add the meat and stir-fry until it's cooked through, then add chopped wood ear mushrooms. Stir-fry for about 4 – 5 minutes until the filling is cooked.

Making Rice Rolls in a Pan
Step 1: Heat a pan, spread a little vegetable oil over the surface of the pan, make sure the heat is medium-low.

Step 2: Pour a moderate amount of batter into the pan. Use a small ladle for pouring and then swirl the pan in a circular motion to spread the batter evenly across the surface.

Step 3: Prepare a tray or large plate, brush a layer of oil on top. Cook the rice rolls for about 20 - 30 seconds until they're cooked, then transfer them to the prepared tray or plate. Because there's already oil in the pan, the rice rolls won't stick. If they do stick, you can use a flat bamboo stick to gently lift them.

Step 4: Start placing the prepared filling on top of the rice rolls, then roll them up. Continue this process until you've used up all the batter and filling.

3. How to Make Delicious Rice Rolls with Authentic Ingredients
Making Sweet and Sour Fish Sauce
Ingredients: fish sauce, sugar, lime, garlic, chili
You adjust the ratio to 1:1, every part of fish sauce corresponds to 1 tablespoon of sugar, and you mix according to the amount you need. Then, finely chop some garlic, some chili, pour them in. Finally, squeeze half a lime. That's it, you've made a super tasty sweet and sour fish sauce to enjoy with rice rolls.
Making Northern-Style Dipping Sauce for Rice Rolls
Ingredients: filtered water, fish sauce, sugar, chili, cinnamon pork sausage
People from the North prepare dipping sauce for rice rolls quite simply. With a ratio of 1:2:1, meaning 1 tablespoon of fish sauce, 2 tablespoons of filtered water, and 1 tablespoon of sugar (some places also add seasoning powder). Then, you just need to add squeezed lime and lightly press a bit of pickled radish or shredded carrots. You can pre-soak the pickled radish and shredded carrots in lime juice to add sourness instead of laboriously preparing these two sour items. Finally, add cinnamon pork sausage.

Preparing Accompanying Ingredients
This one depends on your taste preferences. People from the North usually enjoy it with shredded pork floss, cinnamon pork sausage, spring rolls, fried spring rolls, some fresh herbs with pickled radish, and blanched bean sprouts.

You just need to chop cucumbers, slice fried spring rolls, cinnamon pork sausage, and spring rolls. Then blanch bean sprouts. Once the rice rolls are done, simply arrange them nicely. Finally, sprinkle some fried shallots on top, and if you like, you can add shredded pork floss. Eating with the sweet and sour fish sauce mentioned above is unbeatable.
