Prepare the ingredients for crispy fried pork belly for 2 servings, including:
- Pork belly: 300g
- Shallots: 1 bulb
- Garlic: 1 bulb
- Seasonings: Seasoning powder, fish sauce, black pepper, etc.
- Utensils: Deep frying pan.

- Rinse the pork belly thoroughly with diluted saltwater, then slice thinly and marinate with a bit of seasoning, fish sauce, and broth cube.
- Finely chop the dried shallots and garlic.
- Mix together a blend of: 3 tablespoons of fish sauce; ½ teaspoon of ground black pepper.

- When making crispy fried pork belly, it's best to slice the meat thinly. Slicing it too thick will make it difficult for the seasoning to penetrate, resulting in a tough and less flavorful dish. Thinly sliced meat will render out excess fat when cooked, making it more enjoyable to eat.
- Cut the meat into bite-sized pieces and blanch them in boiling water for about 30 seconds. This helps to tighten the surface of the meat, resulting in a more fragrant and less flaky texture when fried.
- When marinating the meat, use a moderate amount of fish sauce, seasoning, and broth cube. You can adjust the seasoning during cooking if needed.
3. How to fry delicious crispy pork belly slices
Step 1: Fry the meat until the fat is rendered.
Place the meat in the pan and cook over medium heat.
As it fries, the meat will release its own fat, so there's no need to add cooking oil or fat at the beginning. Just toss the meat evenly to prevent it from sticking to the pan.

Step 2. Sautee the finely chopped shallots and garlic along with the meat.
Once the meat turns golden brown on both sides, it will release a lot of fat. Use a spoon to scoop out some of this fat, leaving just a little to prevent the meat from drying out. Then add the chopped shallots and garlic to sauté along with the meat.
Note: Since the meat was marinated with fish sauce initially, it already has a savory flavor. Taste and adjust for saltiness, then add a bit of sugar and stir until it thickens before turning off the heat.

- Choose thin skin, white fat, lots of meat, with a balanced fat-to-lean ratio (20-30% fat) for a delicious and not overly greasy taste. If you buy pork belly with too much fat, it will be greasy, and if it has too much lean meat, it won't taste good because the meat will become dry and tough when fried.
