Depending on the flour quality, adjust the water amount accordingly. If the dough is sticky, add a bit more tapioca starch, and if it's dry, add more water.
Sprinkle some flour on a flat surface, rub evenly to prevent sticking. Take the dough out of the bowl, knead continuously, working it until it becomes smooth, elastic, and has a chewy texture. Typically, knead the dough for 10-15 minutes.
Step 2: Shaping the Dough
Use your hands to shape the dough into small balls, rolling them in flour to prevent sticking. Ensure the pearls are evenly sized, not too large to ensure even cooking.

Step 3: Boiling the Bubble Tea Pearls
Bring 2 liters of water to a boil. Then gently drop the shaped pearls in. Use chopsticks to stir lightly, preventing the pearls from sticking together.
Once the bubble tea pearls float to the surface, indicating they are cooked, simmer for an additional 5 minutes, then turn off the heat. Allow them to sit for 10-20 minutes to avoid stiffness. Scoop out the pearls and soak them in ice water for 15 minutes.
Step 4: Cooking Black Sugar Bubble Tea Pearls
Dissolve black sugar in 150ml filtered water. Pour the sugar water into a pot and heat over medium heat until the sugar boils, froths, and sticks to the pot. Turn off the heat.
While heating, avoid stirring the sugar with a spoon. The completed black sugar should have a brownish-yellow color and a certain level of viscosity.
