- 3 ripe tamarinds
- Onion leaves

How to make crab noodle soup:
Step 1: Prepare the crab and ribs

- Rinse the ribs and simmer for about 2 hours to make the crab noodle soup broth.

- Clean the field crab, peel off the shell, and remove the gills.
- Use a skewer to poke the crab roe into a small bowl separately.
- Crush the crab and strain the water.
Step 2: Make the broth

- Boil the strained water with the crab. Note: when boiling, simmer gently and stir lightly so that the crab meat floats to the top and does not break, scoop the floating crab meat into a separate bowl. Pour the crab water into the simmered bone broth.

- Mix the bamboo shoots with minced meat, the remaining shallots, and ½ teaspoon of salt.
- Clean the lolot leaves and let them drain.

- Then, wrap the mixture in lolot leaves. When wrapping, pay attention to ensure that the leaves are dark green on the outside of the piece. After wrapping, place a pan on the stove, pour cooking oil and heat it up, then add the wrapped rolls, fry until cooked, then remove to a plate.
Step 4:

- Wash the raw vegetables, soak in salt water, rinse with filtered water.
- Pick and wash the water spinach, cilantro, and morning glory, cut into sections.
Step 5: Present and enjoy
- When eating, put the rice crackers in a bowl, add grilled pork wrapped in lolot leaves, arrange the vegetables on top, sprinkle with finely chopped coriander, add a little crab meat to the bowl, ladle the broth into the bowl, and ... enjoy.
