Ingredients:
- Beef shank: 600g
- Pork hock: 800g
- Beef marrow bones: 1kg
- Tendon (beef or pork): 100g
- Fermented shrimp paste: 3 tablespoons
- Lemongrass: 6 stalks
- Ginger: 50g
- Shallots, garlic
- Fresh greens: bean sprouts, spring onions, Vietnamese coriander, banana blossoms
- Hue-style sausage: 200g
- Thick vermicelli noodles
- Seasonings: salt, sugar, MSG
- Use thick strings to tie up the beef shank and pork hock.

Sate chili paste part:
- Chili powder: 1 tablespoon
- 1 fresh chili, finely chopped
- 1 clove of garlic, finely minced
- ¼ pineapple, finely chopped
- 1 stalk lemongrass, finely minced
- Salt, sugar, cooking oil
Quick Note:
- Choose front pork hock for better taste.
- If Hue-style sausage is not available, you can substitute with Vietnamese pork sausage.
- Regular thin vermicelli noodles can be used as a replacement for thick vermicelli noodles.
How to Cook Hue Beef Noodle Soup:
Step 1: Prepare the Ingredients
- Peel and clean the ginger, then crush it.
- Peel and clean the lemongrass. Finely mince half of it, and cut the other half into pieces then crush them.
- Peel and finely mince shallots and garlic.
- Pick and wash the fresh greens, then drain well.

- Remove bones from pork hock, wash thoroughly, then roll and tie with string.
- Wash the beef thoroughly, then tightly tie with string.
- Wash the beef marrow bones, cut into 2 or 3 pieces.
Step 2: Marinate the Meat
- Place a pot of water on the stove, briefly blanch the marrow bones, beef, and pork hock.
- Take ½ bowl of water mixed with fermented shrimp paste, use chopsticks to stir evenly.
- Marinate the meats with seasoning: 1 tablespoon salt, 1 tablespoon diluted fermented shrimp paste, ½ tablespoon MSG, 2 tablespoons sugar, 1 tablespoon minced shallots, 1 tablespoon minced garlic, and 1 tablespoon minced lemongrass.
- While waiting for the meat to marinate, heat up a pot, bring water to a boil, then add the tendons to cook. After cooling, cut into square pieces.

Step 3: Simmer the Meat and Bones
- Place lemongrass and ginger at the bottom of the pot, pour water, then add beef marrow bones and pork hock to cook until tender. Then, remove the pork hock to a bowl of cold water to prevent the meat from becoming dry.
- Continue by placing lemongrass and ginger in another pot, pour water and add the beef to cook until tender. Once cooked, remove and place in a bowl of cold water to firm up the meat.
Step 4: Prepare the Broth
- Combine the simmered pork hock, beef, and marrow bones in a large pot, adding more water if necessary.
- Bring the broth to a boil, then add the cut lemongrass segments. Season with 2 tablespoons salt, 2 tablespoons sugar, 2 teaspoons MSG, and the remaining diluted fermented shrimp paste. Simmer for about 30 minutes then turn off the heat.

Step 5: Make Chili Paste
- Heat oil in a pan, then sauté garlic and lemongrass until fragrant, next add pineapple and stir well.
- After about 5 minutes, add 1 teaspoon of sugar and 1 teaspoon of salt. Finally, add chili powder and fresh chili. Stir until the mixture thickens.

Step 6: Completion
- Slice the meat thinly, and cut the sausage into small, thin pieces.
- Blanch the noodles in boiling water, then place in a bowl. Add the meat, tendons, and sausage on top, then pour the broth over everything.
