Notes when cooking spicy and sour Thai hot pot
- If you don't have ready-made Thai hot pot sauce, you can make it yourself by following these steps: Heat some oil, then sauté tomatoes for a while. Add galangal, lemongrass, shallots, chili powder, and a bit of Chinese five-spice powder. Stir until you smell the characteristic aroma of Thai hot pot, then add broth and continue cooking following the steps above.
- You can replace the vegetables according to your taste, and if you can't handle spicy food, you can add less spicy sauce or omit it altogether.
- When simmering the broth, if you have time, simmer it for more than 1 hour so that the bones release all their sweetness, then the hot pot broth will be even more delicious.
- If you add clams to the hot pot, remember to season the broth less than usual, so that when you add the clams, it will be just right.
- Adding kaffir lime leaves and lemongrass will enhance the flavor of the Thai hot pot. The boiling pot emits a fragrant scent of lemongrass and spicy chili, the rich and flavorful taste when eating seafood won't be overwhelmed by any fishiness because it's masked by the aromatic broth.
