- Shrimp: 400g
- Sweet potato: 1 tuber about 300g
- Carrot: 1
- Onion: 1 small bulb
- Lemongrass: 2 stalks
- Garlic: 1 clove
- Curry powder: 1 packet
- Coconut milk: 200ml
- Chili powder: 1 teaspoon
- Basil, seasoning cube, spices
Instructions on how to make shrimp curry:
- Clean lemongrass, chop 1 stalk finely, smash another stalk and cut into pieces. Peel and mince the garlic as well.
- Peel and cut sweet potatoes into bite-sized pieces, soak in a bowl of diluted saltwater to prevent browning.

- Similarly, cut carrots and onions into pieces similar to sweet potatoes.
- Wash and clean basil leaves.

- Clean the shrimp, peel, remove heads, devein, and rinse thoroughly.

- Marinate the shrimp with minced garlic, lemongrass, a pinch of seasoning cube, spices, chili powder, and 1 packet of curry powder.
- Let it sit for about 10 minutes, then fry the sweet potatoes in a pan until lightly golden (or just sear the surfaces), then transfer to a plate.

- Sauté the lemongrass and garlic until fragrant, then add the shrimp and stir-fry.

- Pour about 1 bowl of water into the shrimp pot, bring to a boil then add sweet potatoes and carrots. Boil the mixture for a few minutes then add onions and coconut milk.
- Season with more seasoning cube, spices and boil for a few more minutes then add basil leaves.

- Finally, serve shrimp curry in a bowl, enjoy with rice, bread, or noodles, all equally delicious.
Notes when making shrimp curry:
For the best and most successful shrimp curry, the quality of the shrimp plays a crucial role. If you can't find prawns, you can opt for smaller shrimp as long as they are fresh. Good shrimp should have slightly greenish flesh when peeled.
If you're not a fan of spicy food, you can reduce the amount of chili, but make sure not to eliminate it entirely as it's essential for the curry flavor.
