According to Traditional Chinese Medicine, oxtail is considered warm in nature, with a sweet taste. It is believed to tonify the kidneys, nourish the blood, and benefit those with weak limbs, premature graying of hair, fatigue, and bone and joint pain. Modern medicine recognizes oxtail as rich in protein, minerals (such as calcium, phosphorus, iron...), and notably high in collagen, which promotes bone and joint health.
However, excessive consumption of oxtail can cause internal heat in the body. If you have a warm body constitution, high blood fat, suffer from gout, or have children susceptible to measles or frequent boils, it is advisable to consume oxtail in moderation or avoid it altogether.

Steps to Follow
Step 1: Oxtail Stewing
Oxtail needs thorough preparation before stewing to remove any unpleasant odor. You can briefly sear it over a flame or use a torch to singe the outer skin. Then, use a knife to scrape off any charred parts, rinse thoroughly with diluted salt water. Next, blanch in boiling water for about 3-4 minutes, then rinse again and cut into edible segments.

- Marinate the oxtail with 1 tablespoon of seasoning powder for about 20 minutes.
- In a pan, heat 1 tablespoon of cooking oil + 1 bulb of shallot + 1 stalk of lemongrass (finely chopped) until fragrant. Add the oxtail and stir until firm. Then add a pinch of cinnamon, cloves, stir for a while. Pour water into the pressure cooker, add 1 bruised lemongrass, ginger. Once boiling, transfer everything into the pressure cooker. Simmer for about 30 minutes until the oxtail is tender.
- Strain the broth for cooking porridge, set aside the oxtail. Discard the ginger, lemongrass, cinnamon, cloves.
Step 2: Porridge Stewing
- Soak a mixture of glutinous rice and regular rice in warm water for about 1 hour.
- Strain the rice and add it to a pot along with the oxtail broth.
- Simmer until the porridge is soft and fully cooked, then season to taste.
Step 3: Enjoyment
- Serve the porridge in a bowl, top it with simmered oxtail, add some fresh herbs according to your preference, and enjoy while still hot.
