STEPS TO MAKE SPICY RIB SOUP
Step 1: Cooking the Porridge
- Mix together glutinous rice and brown rice in a bowl, stir well, then wash and drain thoroughly.

Step 2: Braising the Ribs
- Wash the ribs thoroughly, cut into bite-sized pieces, and blanch briefly in boiling water to clean.
- Place the ribs in a large bowl, add 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of ginger powder to the bowl, mix well, and marinate the ribs for about 20 minutes to absorb the spices.
- Heat up oil in a hot pan, then transfer the ribs to the pan, fry briefly and then remove the ribs, transfer to a pot. Add a few drops of broth, 1.5 tablespoons of fish sauce, 2 tablespoons of water, 1 teaspoon of salt, ½ chopped chili to the pot, simmer on low heat until the ribs are tender, the braising liquid thickens, then season to taste and turn off the heat.

Step 3: Presentation
- Scoop the porridge into a bowl, then add the braised ribs, chopped chili, and finely chopped spring onions. Drizzle some braising liquid on top and serve hot with fried breadsticks, boiled eggs, or crushed chili fish sauce.
- If you prefer not to separate the porridge and ribs, before serving, add the ribs and braising liquid directly to the porridge pot, stir well, and enjoy as above.
