Ingredients for making ram it cakes:
(Serving for 4)
- 300g glutinous rice flour
- 200g fresh shrimp
- 100g pork belly
- Spring onions, shallots, pandan leaves, salt, chili, fish sauce
How to make ram it cakes:
Step 1:
- Peel and wash shallots, finely chop them. Wash and finely slice spring onions. Clean and drain pandan leaves.
- Clean fresh shrimp. Peel the shells off 1/3 of the shrimp (more than 60g), dice them finely, and set aside in a bowl. Steam the remaining 2/3 of the shrimp separately to make shrimp floss.
- Clean pork belly, dice it finely.
- Marinate pork and the diced shrimp with some finely chopped shallots and fish sauce.
- Sauté fragrant shallots, add the marinated pork and fresh shrimp, stir-fry until cooked to make the filling. Crush or finely grind the steamed shrimp, then add to the pan and stir-fry until dry, adding a pinch of salt to make shrimp floss.

Step 2:
- In a bowl, place glutinous rice flour, add half a teaspoon of salt, and a tablespoon of cooking oil. Mix well. Slowly pour warm water into the bowl, kneading the dough thoroughly. Continue until the dough is smooth, non-sticky, and has a moderate softness—neither too dry nor too sticky.

- Cut and shape the dough into round pieces, either the size of a small apple or larger, depending on preference.
- Divide the dough in half to make two types of cakes: flat cakes and filled cakes. For the dough for flat cakes, press it slightly flat with a hollow center. For the dough for filled cakes, knead the shrimp and meat filling inside, then shape it into a round ball, sealing it tightly.

Step 3:
- Line pandan leaves in the steamer, brush with a bit of cooking oil, then place the filled cakes in the steamer. Steam until the cakes are cooked, and the translucent outer layer disappears.
- Heat cooking oil, deep-fry the flat cakes until golden. Remove and drain excess oil. -Take a steamed filled cake and place it on top of the fried flat cake.

Step 4:
- Fry finely chopped spring onions in hot oil, flip them, then set aside. Mix shrimp paste thoroughly.
- When serving, place the cakes on a plate, sprinkle with a bit of shrimp paste and spring onions on top. Dip in freshly sliced chili fish sauce.
Finished Product Requirements:
