- Pork belly: 200 grams
- Soft tofu: 2 blocks
- Shallots, spring onions
- Seasonings: fish sauce, salt, seasoning powder, sugar, pepper, cooking oil

How to Make Kimchi Tofu and Pork Belly Soup:
- Slice the pork belly thinly and marinate with 1 teaspoon of seasoning powder, ½ teaspoon of pepper.
- If the kimchi is still in whole pieces, cut it into bite-sized chunks.
- Cut the tofu into square pieces - Finely chop the shallots, wash the spring onions and finely slice them.
- Sauté the chopped shallots until fragrant with a little oil, then add the pork and stir-fry until cooked. Then add the kimchi and stir well to absorb the oil, then pour in the broth and bring to a boil.
Note: Since kimchi is already salty and spicy, you don't need to add much seasoning, just add a tablespoon of sugar to balance the flavor.
- Bring to a gentle boil for about 3 minutes, then add the soft tofu and stir gently, being careful not to break the tofu. Finally, add the spring onions, adjust the seasoning to taste, and the soup is ready.
2. Kimchi Seafood Soup

Ingredients:
- 100g octopus
- 100g shrimp
- 200g clams
- 200g kimchi (with its juice)
- 1/2 small turnip
- 200g bean sprouts
- Spring onions, dried onions
- Flour
- Seasonings: salt, sugar, cooking oil
How to Make Seafood Kimchi Soup:
- Clean the octopus, remove the internal organs, mix with some flour, squeeze well to remove excess slime and fishy smell, then rinse several times with water until clean, drain and cut into bite-sized pieces.
- Clean the shrimp and clams.
- Rinse the bean sprouts, drain.
- Peel and wash the turnip, then cut into round slices.
- Wash the spring onions, finely chop.
- Serve the kimchi in a bowl, if the kimchi is large, use scissors to cut it into bite-sized pieces.
- Heat cooking oil in a pan, sauté the onions until fragrant, add the octopus and stir-fry until cooked, then transfer the octopus to a separate bowl.
- In the same pot, pour in about 2-3 bowls of filtered water, add the turnips, continue to boil until the turnips are soft, then add the kimchi and boil for another 3-5 minutes, adjust the seasoning to taste. Since the kimchi broth already contains salty and sour flavors, you only need to season lightly.
- Add the bean sprouts, octopus, shrimp, and clams to the pot, bring to a boil once more, then turn off the heat. Add finely chopped spring onions, then transfer to a large bowl.

3. Vegetarian Kimchi Soup
Ingredients:
- 250g kimchi, cut into bite-sized pieces
- 2 blocks of tofu, diced into small cubes
- Mushrooms, chopped (shiitake mushrooms, oyster mushrooms, etc.)
- Sweet vegetable broth (carrots, turnips, parsnips...)
- 2 teaspoons of olive oil
- Sesame seeds
- Finely chopped spring onions
- 2 cloves of minced garlic
- 1 teaspoon of brown sugar
- 1 egg (if desired)
- 1 tablespoon of Korean chili powder
- Seasonings: salt, sugar
How to Make Vegetarian Kimchi Soup:
- Heat olive oil in a pot and toast sesame seeds. When the seeds are fragrant and turn golden, add the kimchi and sauté for about 4 minutes.
- Add mushrooms, chili powder, spring onions, and garlic, then stir well.
- Add about 750ml of vegetable broth and bring to a boil.
- Once the broth is boiling, season with salt and sugar to taste. Then add the tofu, gently stir to prevent the tofu from breaking. Simmer on low heat for another 15 minutes before turning off the heat. (You can add an egg to the soup if desired).
