How to make lotus stem salad with shrimp and meat:
Step 1:
- Cut lotus stems into bite-sized pieces. Soak them with 1 tablespoon of vinegar and 1 tablespoon of sugar for 2 hours in the refrigerator.
- Next, wash thoroughly, drain, and halve or slice lotus stems into thirds.

Step 2:
- Wash pork thoroughly, boil it with 1 teaspoon of salt and thinly sliced ginger.
- Once the meat is cooked, remove it and place it in a bowl of cold water to keep it crispy. Cut the meat into pieces equal to the size of the lotus stems.

Step 3:
- Clean the shrimp thoroughly, boil them with ginger for about 5 minutes.
- Peel off the shells and remove the black vein from the back.

Step 4:
- Rinse and peel carrots, then julienne them.

- Pick all the fresh and tender leaves of Vietnamese coriander, wash them thoroughly, and chop finely.
- Peel shallots, slice thinly. Heat oil in a pan, sauté the shallots until fragrant.
Step 5:
- Prepare the salad dressing: 6 tablespoons sugar, 1 teaspoon salt, 1 teaspoon ground pepper, 1 tablespoon fish sauce, 1 teaspoon minced garlic, 1 teaspoon minced chili. Stir well until all the spices dissolve.

- Layer lotus stems, shrimp, meat, carrots, Vietnamese coriander, fried shallots, and julienne chili in a large bowl, then mix well.
- Pour the prepared dressing into the bowl and mix again to absorb the flavors. Garnish with finely chopped Vietnamese coriander on top and sprinkle with roasted peanuts.
So, the lotus stem salad with shrimp and meat is now complete, a mixed salad with the sourness of lime, the spiciness of chili, and the refreshing sweetness of lotus stems.
Note: Mixing all the ingredients with seasoning at once can cause the salad to become watery and lose its flavor. To avoid this, prepare the salad dressing separately and mix it with the salad just before serving, about 10 - 15 minutes beforehand.
