How to Make Fried Vegetarian Spring Rolls:
Step 1:
- Soak vermicelli in warm water until soft, then cut into small pieces

- Soak shiitake mushrooms and wood ear mushrooms in warm water until soft. Remove the stems from the wood ear mushrooms. Finely chop both shiitake mushrooms and wood ear mushrooms.
- Pick and wash spring onions, then finely chop them.
Step 2:
- Put all the ingredients that have been chopped into a large bowl. Add 1 tablespoon of salt, ½ tablespoon of seasoning powder, ½ tablespoon of black pepper, then mix everything evenly.

Step 3:
- Place a piece of rice paper on a clean flat surface and spread the filling on one corner. Ensure the filling is the same size as the rice paper.

- Fold the rice paper over, fold the edges on both sides, then roll it up. Make sure to roll it tightly to prevent the spring rolls from bursting when frying.
- Repeat the process until all the rice paper and filling are used up.
Step 4:
- Heat a pan on the stove and add enough oil to fry the spring rolls.
- Once the oil is hot, add the vegetarian spring rolls and fry until evenly golden brown.

- Remove the spring rolls from the pan and place them on a plate to drain excess oil.
