- 300g of beef brisket
- 300g of fresh clams
- 500g of fresh tiger prawns
- 300g of fresh squid
- 500g of tilapia fillet
- 4 tofu sheets, 200g of fish balls
- 1 bulb of dried onions, 1 bulb of garlic
- 2 lemongrass stalks, 1/2 pineapple, 1 small knob of ginger
- 50g of shiitake mushrooms, 200g of enoki mushrooms
- 3 tomatoes, 2 fresh chili peppers
- 500g of marrow bones
- Lettuce, spinach, chrysanthemum greens, bok choy...
- Seasonings: cooking oil, 1 packet of Thai hotpot seasoning, bouillon, sugar, salt...

How to cook delicious seafood hotpot
Step 1: Prepare ingredients for cooking seafood hotpot
- Beef brisket meat removed and placed on a separate plate
- Clean the clams, soak them in rice water with a few slices of thinly sliced chili for 30 minutes to allow the clams to release all the dirt, then remove the clams and rinse them thoroughly to drain.
- Fresh tiger prawns, trim off the whiskers and head, then use a knife to cut the back of the shrimp in half to remove the black vein, discard it, then rinse again with water and drain.
- Clean the squid, remove the guts, discard the squid sac, eyes, and beak, then rinse again with water, cut the squid into small pieces or leave it whole.
- Clean tilapia fillet, rub lightly with some salt to remove the fishy smell and sliminess, then rinse again with water, slice the fish into thin, bite-sized pieces.

Preparation of ingredients for cooking seafood hotpot
- Clean dried onions, peel garlic, crush and finely chop them. Clean ginger, peel, slice, and then julienne.
- Clean lemongrass, pound and cut into sections, rinse fresh chili, and thinly slice.
- Cut pineapple into small pieces, soak shiitake mushrooms in warm water for 15 minutes until softened, then remove and rinse clean, cut off mushroom stems, and split mushrooms in half.
- Trim off roots of enoki mushrooms, then use hands to separate strands, and rinse them clean.
- Cut tofu into bite-sized pieces, score fish balls to help them expand beautifully when cooked.
- Clean lettuce, spinach, chrysanthemum greens, and bok choy, soak them in diluted salt water for 20 minutes, then remove and drain.
Step 2: Simmer the bones
- Scrub marrow bones with salt to remove any odor, then rinse with water. Heat pot, add 2 tablespoons of cooking oil, fry chopped dried onions and garlic until fragrant, then add bones and stir-fry until firm. Season with a little bouillon, MSG, fish sauce, cook for another 1 - 2 minutes, then add 2 liters of water to simmer.

Bone broth preparation
- When water boils, regularly skim off foam on surface to make broth more fragrant and visually appealing.
- Simmer the bones for 60 minutes until they become tender, then remove the bones and set aside.
Step 3: Golden-fry the tofu

- Heat pan with moderate amount of cooking oil until hot, then slowly add tofu pieces to fry until golden brown. Remove and place on plate lined with paper towels to absorb excess oil.
Step 4: Cook the seafood hotpot broth
- Heat pot with 3 tablespoons of cooking oil, add finely chopped garlic and onion and sauté until fragrant. Then add tomatoes and pineapple, stir-fry until soft, season with a bit of bouillon for richer flavor. Next, add lemongrass, ginger, and continue to stir-fry for 1 - 2 minutes. Then add shiitake mushrooms and simmer with seasoning for a bit more flavor.
- Stir-fry for 2 - 3 minutes, then add simmered bone broth and bring to a boil. Add Thai hotpot seasoning pack and bring to a boil. Adjust seasoning to taste, then simmer over low heat.

Cook the seafood hotpot broth
- Finally, add spring onions and coriander to enhance the aroma.
- Arrange the ingredients around the hotpot in layers, adding mushrooms, fish balls, catfish fillet, seafood sequentially. Let them cook until done, then remove and enjoy while hot.
