Similar to shrimp and pork spring rolls, pig ear spring rolls are a light dish made with fresh vermicelli, fragrant herbs, and replacing shrimp and pork with pig ears. All wrapped in a thin layer of rice paper. This dish is served with fish sauce instead of black bean sauce like shrimp and pork spring rolls.

Pig ear spring rolls, like shrimp and pork spring rolls, are very popular in Saigon. They can be found in street food stalls along alleyways, roadside eateries, as well as in upscale restaurants and hotels.

Ingredients for pig ear spring rolls:
- 2 pig ears
- 2 packs of rice paper rolls
- 400g vermicelli
- Assorted fresh greens: water spinach, basil, lettuce, chives…
Ingredients for fish sauce:
- 1 bottle of pure fish sauce
- 2 cloves of garlic (finely chopped)
- 1 fresh chili (finely chopped)
- 1 dry shallot (finely chopped)
- 1/4 pineapple (finely chopped)
- A pinch of sugar (to taste)
How to make pig ear spring rolls:

- Assorted fresh greens: thoroughly pick, soak in diluted salt water, and rinse with clean water 2-3 times. Drain and let dry.
- Clean pig ears, then sprinkle with salt to remove odor, followed by rinsing with diluted vinegar or vinegar water. Rinse again with clean water once more.

- Boil the water until it reaches a boil, then add the pig ears. Avoid adding them while the water is cold. Let it simmer for about 13 minutes before removing the pig ears and immediately placing them in boiling water to cool, diluted with vinegar. Allow the pig ears to cool, then repeat the boiling process 2-3 times until they are fully cooked. The aim is to prevent the pig ears from darkening and to ensure a crispy texture when eaten.
- Once the pig ears are fully cooked, remove them and place them directly in a bowl of boiling water to cool, without adding anything to maintain the chill. Only cut them after they have completely cooled. This process ensures that the pig ears do not stick together when cut or eaten.

- Slice the pig ears thinly and in large pieces, approximately 10cm in length, then arrange them on a plate. Finally, enjoy the fruits of your labor.
- Making the rolls: Wet the rice paper, place lettuce leaves and herbs on the bottom, layer with vermicelli noodles, thinly sliced pig ears on top, and place a sprig of cilantro in the center for both fragrance and presentation. Roll tightly and securely.

- To make the seasoning sauce: Sauté the onions, garlic, and chili until golden. Then add the shrimp paste and stir until fragrant. Add a little water and bring to a boil. Season with a bit of sugar to taste, then turn off the heat.

Finally, arrange the rolled pig ear salad on a plate, accompanied by a bowl of seasoning sauce, and invite everyone to enjoy.
