2.1. Prepare the ingredients

- 400 – 500 grams of beef (should choose shoulder or beef tenderloin)
- 1 small onion
- 1 garlic bulb
- 1 dried shallot
- 2 chili peppers
- 1/2 ginger bulb
- 1 lemongrass stalk
- Spring onion
- 30 grams of green peppercorns
- 60ml of water
- Seasonings: cooking oil, bouillon powder, seasoning powder, sugar, fish sauce

2.2. Preparing the ingredients
- Peel and chop the ginger, then lightly crush
- Leave the beef whole, rub with salt and the crushed ginger to remove any odor. Rub for about 3 – 5 minutes then rinse with clean water. You can also soak the beef in diluted salt water for about 10 minutes. Finally, rinse with clean water and pat dry.
- Cut the beef into chessboard-sized pieces, about 3cmx3cm

- Peel off the onion skin, slice thinly
- Peel and finely chop the garlic and dried shallots, finely chop the chili peppers
- Trim the root of the spring onions, discard the wilted parts, wash and cut into 2cm lengths.
2.3. Marinating the beef
- Place the beef in a bowl. Add 1/2 of the chopped garlic and 1/2 of the chopped onions, 1 tablespoon fish sauce, 1 teaspoon sugar, 1 teaspoon salt, and pepper. Mix well and marinate for about 15 – 20 minutes to let the beef absorb the seasoning.

2.4. Cooking Peppered Beef Stew
- Heat a pot on the stove, add 2 teaspoons of cooking oil. When the oil is hot, add the garlic, dried shallots, and lemongrass, stir-fry until fragrant. Add 60ml of water and stir over low heat until the mixture thickens. Then, add the beef and stir until it's firm.
- Next, add all the green peppercorns and mix well. Taste and adjust seasoning to your liking. If you prefer it spicy, you can add chopped chili peppers or sweet chili sauce.
- Finally, cover and simmer the beef for 15 minutes over medium heat until the beef is tender.
- Note: Do not simmer for too long as it will make the peppered beef stew tough and less flavorful.
