Step 1:
To prepare the coconut jelly flan, choose young coconuts with soft flesh. Carefully remove the tough outer shell and scrape off the gray skin. Rinse the coconut thoroughly with water and then create a hole at the top to drain the coconut water.
If you have a whole coconut, heat it over a flame to dry and harden the shell. Then use a knife to easily remove the shell.

Clean the pandan leaves and blend them in a blender until smooth. Strain and collect the dark green pandan juice.
Mix the pandan juice with 1/3 of the coconut water and agar agar, stir well, then bring to a boil. Once boiled, pour into a tray to cool and refrigerate. The flan mixture consists of sugar, fresh milk, agar agar powder, and 2 chicken eggs, whisked thoroughly and strained for a smoother texture. Boil this mixture until it thickens, then add the remaining coconut water and simmer for another 5 to 10 minutes before turning off the heat.

Boil a large pot of water to steam the young coconut flan. Add pandan leaves to the water for fragrance. Steam the young coconut flan for about 90 minutes until set. You can check for doneness by inserting a toothpick into the flan; if it comes out clean, it's ready. Let the coconut flan cool before chilling it in the refrigerator for a few hours before serving.
