• 5 grilled shallots, 3 lime leaves, 3 fresh chili peppers, 1 stalk of ginger.

This method is commonly used in northern rural areas, quite simple but not as delicious as fish sauce. Cut ripe banana blossom leaves, squeeze out a few drops of juice and add to the bowl.

3. How to slice duck blood jelly
+ Place a bowl of prepared solution (step 2) under the duck and slice the jelly to let it flow into the bowl.

+ After cutting the jelly, gently stir to evenly disperse the blood in the solution to prevent it from clotting, then leave it still without moving.
Note: You can cut the jelly at the neck, throat, or wing. But it's best to cut along the vein with a slightly greenish color on the wing for fresher and more abundant jelly.
4. Tips for beating duck blood jelly and making filling
4.1 Making filling for duck blood jelly
+ Put duck, duck giblets, cleaned ginger in a pot, add enough water to cover the duck, cover with a lid and boil for 30 minutes (insert a chopstick into the duck thigh, if there is no red juice oozing out, the duck is cooked)

+Use a small spoon to skim off any excess water on top of the jelly marinated in step 3
+ Mix boiled then cooled water with seasoning powder prepared beforehand in a ratio of 1 part jelly to 2 parts water, stir evenly with chopsticks.
+ Pour the prepared filling onto plates. Then place the plates in a fixed location to set completely, then sprinkle peanuts and thinly sliced liver on top, and you have completed the duck blood jelly dish. • If it's too bland: Mix 2 teaspoons of fish sauce + 1 part boiled then cooled water, pour into the duck blood jelly bowl, stir evenly, then let it rest.
