Simple Recipe for Delicious Duck Salad
Step 1: Prepare the Ingredients
Peel and finely chop shallots and garlic. Rinse and finely chop chili peppers.
Pick the fresh shoots of morning glory, discard old leaves, and take only the tender parts. Soak both morning glory and water spinach in diluted saltwater for 15 minutes, then drain, rinse, and let dry.
Peel and rinse the ginger, finely chop half and crush the other half.
Clean the duck, wash it with a little white wine, salt, and crushed ginger to remove any unpleasant smell, then let it dry and chop it into bite-sized pieces.
Clean and finely chop the onions.
Peel and wash the taro roots, cut them into bite-sized pieces.

Step 2: Marinate the Duck
Place the duck in a large bowl and marinate with shallots, garlic, chili peppers, and ginger, all finely chopped, each in equal amounts. Add 1 tablespoon of sugar, 8 tablespoons of fermented bean curd, mix well, and marinate for about 1 hour to allow the duck to absorb the flavors.

Step 4: Cook the Marinated Duck
Heat a little oil in a large pot over medium heat, sauté the remaining shallots, garlic, ginger, and chili peppers until fragrant and golden brown. Reserve some garlic and chili peppers for making the dipping sauce.
Add the marinated duck mixture, stir well until the duck meat firms up, then immediately add 1 liter of cold water and 0.5 liters of coconut water to the pot, bring to a boil over high heat, then reduce the heat to low and simmer for about 30 minutes, skimming off any foam.

Step 5: Fry the Taro Roots
Heat oil in a non-stick pan over medium heat, fry the prepared taro roots until they are slightly golden brown, then remove and drain excess oil. Frying the taro roots helps them cook faster and enhances the aroma of the duck stew.

Add the partially fried taro roots to cook with the duck. Season with sugar, bouillon powder, and fish sauce to taste. Cook until the taro is tender, then adjust the seasoning, turn off the heat, and add finely sliced spring onions.

Step 6: Make the Dipping Sauce
Take 2 tablespoons of fermented bean curd and put them in a small bowl. Add 1/2 tablespoon of sugar, 1 teaspoon of lime juice, mash the fermented bean curd, then add some finely chopped garlic and chili peppers, season to taste.
Now the duck stew is ready to be enjoyed!
