Ingredients for making fried fermented pork roll
- 300g minced beef chuck
- 300g pork lard
- 3 cloves of garlic, 3 fresh chili peppers
- Fish sauce, spices, sugar, cornstarch, ground pepper, cooking oil
- Tempura flour
How to Make Fried Fermented Pork Roll
Step 1:
- Peel garlic, crush, finely chop,
- Mix minced beef chuck with 1 tablespoon of fish sauce, ½ teaspoon of cornstarch, 2 teaspoons of sugar, 2 teaspoons of cornstarch, ½ teaspoon of ground pepper, and the minced garlic from above.
- Then, wrap the meat tightly with food wrap and refrigerate for about 2 hours.
Step 2:
- Clean pork lard, remove the hair, squeeze with salt, then rinse thoroughly with water, finally put into a pot and boil until cooked.
For crispy pork skin, prepare a bowl of cold water nearby to immerse the skin immediately after removing it from the heat.
- Slice the pork skin into small strips, about the length of a fingertip.

Step 3:
After chilling the pork, remove any small ice crystals. Use an egg beater or a stick to mix the dough evenly until the meat becomes tough and elastic. If you don't have a stick for mixing dough, you can use a meat grinder and grind the meat quickly while it is still cold. The purpose of this step is to make the pork roll chewy and not crumbly.
Step 4:
Mix the pork skin thoroughly. Then, wrap it tightly with food wrap.
Spread out the food wrap, place a small portion of the filling onto it, arrange it into a long piece, then roll up one end, twisting it like candy. Roll it a few times with your hands to make it firm. Once done, refrigerate the rolls overnight. They will be ready to fry the next morning.
Step 5:
When frying the fermented pork rolls, remove the food wrap around each roll, coat them with crispy tempura flour, then fry until golden in a pan.
