- Serving size: 10 pieces
- Preparation time: 15 minutes
- Cooking time: 25 minutes
- Total time: 40 minutes
2.1. Prepare ingredients
- 200g all-purpose flour
- 30g caster sugar
- 20g white sesame seeds
- A pinch of salt
- 100ml warm water
- Cooking oil
- 1 tube vanilla extract (optional)
2.2. Cooking instructions
Step 1: Mix the dough
- Take a large bowl, add all-purpose flour, caster sugar, and a pinch of salt (about 1/5 teaspoon) and mix well.
- Push the flour to the side of the bowl to create a small well for the warm water. Slowly pour in warm water (about 30°C) into the flour mixture and stir well to prevent clumping.
- Note: Pour the water slowly to moisten the flour just enough and prevent it from becoming sticky.
Step 2: Knead the dough
- The kneading process greatly affects the fluffiness of the cake. For this non-yeast cake recipe, follow these steps:
- Apply a little cooking oil (or flour) to your hands to prevent sticking. Then knead the flour mixture into a smooth, elastic dough. You can spread a layer of all-purpose flour on the countertop and place the dough on it for kneading. The requirement is for the dough to be smooth, not sticky, and with a moist texture. (Note: Do not knead the dough for too long, as it will make the cake tough).
- Place the dough in a bowl, cover the bowl completely with a damp cloth (or plastic wrap) and place it in a draft-free area for about 2 hours. When the dough has doubled in size compared to the initial amount of dough, it is ready.
- Remove the dough and press it with your hands to release air bubbles and add vanilla extract (if using), then knead it again until evenly mixed.
