No-Oven Phu Si Cake Recipe
Ingredients needed for making Phu Si cake Ingredients for the cake base:
- Chicken eggs: 4 pieces;
- Fresh milk: 30ml;
- Cooking oil: 25ml;
- Wheat flour: 210g;
- Leavening agent: 4g;
- Rising salt: 1g (baking soda);
- Salt: ¾ teaspoon;
- Sugar: 100g;
- Vanilla.
Ingredients for the pandan leaf covering
- Pandan leaves: 1 small bunch;
- Chicken egg: 1 piece;
- Cornstarch: 25g;
- Wheat flour: 26g;
- Sugar: 40g;
- Butter: 50g;
- Coconut cream: 70g;
- Fresh milk: 30g;
- Grated coconut: 1 cup.
Steps to make Phu Si cake
Step 1: Sift together wheat flour, leavening agent, salt, and rising salt. Grease the mold with cooking oil.

Step 2: Beat eggs and sugar until fluffy. Gently mix flour with the egg mixture.
Step 3: Add vanilla, cooking oil, and milk and mix well. Pour the batter into the mold (about 2/3 full) and place in a preheated steamer (or you can also use the steaming tray of an electric rice cooker). After 15 minutes, insert a toothpick into the cake; if it comes out clean, the cake is cooked. Remove and let cool.
Step 4: Wash the pandan leaves, then chop them and put them in a blender with 100g of water, blend until smooth, then strain to get the pandan juice. Beat eggs with sugar until dissolved, then add the pandan juice and mix well. Add cornstarch and wheat flour. Finally, add fresh milk and coconut cream to the mixture and mix well. Use a sieve to strain the milk mixture until smooth, then transfer to a pot and cook over low heat. When making Phu Si cake, continuously stir the mixture; when it is hot, add butter. The mixture will gradually thicken; continue stirring and turn off the heat.
