Delicious and flavorful crispy salt-roasted clams
Ingredients needed:
Clams: 1kg
Sticky rice: 1 small bowl
Brown rice: 1 small bowl
Mung beans with shells: 3 tablespoons
Sea salt: 1 tablespoon
Lemongrass: 10 stalks
Lime leaves
Chilies: 5 pieces

Choose fresh live clams
Preparation method as follows:
- Rinse sticky rice, brown rice, and peeled mung beans thoroughly, removing any dirt, impurities, and damaged grains. Then, soak each type separately in water. Soak for about 30 minutes until the rice and mung beans swell, then drain each type separately.
- Clean the clams thoroughly and drain. Then, use scissors to cut the shell along the back spine so that when roasting, the clams can absorb salt and are easy to peel when eating.

- Rinse lemongrass, lime leaves, and chilies thoroughly and drain. Keep the lime leaves and chilies whole, while thinly slice the lemongrass diagonally.
The method to make salt-roasted clams consists of the following steps:
Step 1: Turn on the stove, wait for the pan to heat up, then add each type of rice to roast over low heat. Stir evenly until the rice is cooked through and fragrant, then transfer to a bowl and set aside.
- Continue to roast the mung beans (also over low heat). For mung beans, ensure they are thoroughly cooked.
- After roasting the mung beans, set aside. Then, continue to add salt and roast until the salt turns milky white, then you can turn off the stove.
- Next, place each type of sticky rice, brown rice, mung beans, and salt that have been roasted and cooked into a small mortar and lightly grind (note: only lightly grind, do not grind finely). After grinding all, mix the 4 types together. If you like it spicy, you can also add a little ground pepper to the salt.

Step 2: Turn on the stove, wait for the pan to heat up, then pour cooking oil into the pan until it covers the surface. When the oil is hot, add lime leaves to fry briefly until crispy, then remove. After that, fry the chilies briefly in the oil and then remove, allowing the oil to drain.
- Next, add sliced lemongrass to fry until golden and crispy, then remove and set aside.
