
Ingredients
Sponge Cake Base
- Eggs: 3 pieces
Cake flour: 75g
Unsweetened milk: 30g
Vegetable oil: 30g
Salt: 1 - 2g
Sugar: 60g
Vanilla extract: 5 - 6 drops

Egg Oil Sauce
- Egg yolks: 1 piece
Salt: 2g
Sugar: 10g
Lime juice: ½ tablespoon
Vegetable oil: 60g

Other Ingredients
- Salted eggs, Laughing cow cheese, Shredded pork floss

Air fryer, Electric egg beater, Induction cooker, Pot, Cake mold, Bowl, Sieve

3. Steps to Make Salted Egg Sponge Cake:
- Step 1: Beat the eggs
Firstly, separate the egg yolks from the egg whites. Beat the egg yolks with salt and vanilla.

Beat the egg whites until foamy all over the surface, then gradually add sugar. Divide 60g of sugar into 3 portions, adding each portion with 1-2 minutes apart, continue beating until stiff peaks form.

- Step 2: Mix the batter
Mix the egg yolks into the bowl of egg whites, then sift flour into the bowl. Gently fold with a spatula, ensuring to fold in the same direction, until the batter is well combined.

Next, mix the milk and oil mixture. Then take about 1/3 of the batter on top, mix evenly with milk and oil. Once smooth, pour the mixture into the bowl of mixed flour. Gently fold with a spatula in the same direction until fully incorporated.

- Step 3: Pour the batter into the mold
Pour the mixture into the mold, use a small stick to move in a spiral motion to remove air bubbles, then drop the mold from a height of about 10-15cm onto a flat surface several times to remove any air bubbles in the cake.

- Step 4: Bake the cake
First, preheat the air fryer for 10 minutes at 170 degrees Celsius. Then cover the cake mold with aluminum foil and bake for the first time at 150 degrees Celsius for 30 minutes

After the first baking, remove the aluminum foil and bake at 130 degrees Celsius for 25 - 35 minutes. Leave the cake in the pot for 3 minutes before removing it slowly from the mold.
- Step 5: Make the egg oil sauce
First, combine egg yolks, sugar, salt, and lime juice in a bowl and place it over a pot of boiling water, then beat for about 1-2 minutes until the sugar is dissolved and the egg yolks lighten in color, then remove from the pot.
