In this article, the PasGo Team shares a fantastic recipe for sour rib noodles to treat the whole family! This dish entices with the unique taste of tender ribs, combined with a sweet and tangy broth that keeps the dish from being overwhelming.

Ingredients: (for 4 servings)
- Baby back ribs: 500g
- Pork knuckle: 200g
- Wood ear mushrooms: 20g
- Chinese celery: 1 bunch
- Tomatoes: 2 pieces
- Tamarind: 1 large fruit
- Shallots: 2 bulbs
- Cilantro: 1 bunch
- Chive flowers: 50g
- Vermicelli noodles: 800g
- Seasonings: salt, pepper, seasoning powder, cooking oil
Instructions:
- Rinse and core the tomatoes
- Peel and chop the tamarind
- Peel and finely chop the shallots
- Wash and chop the chive flowers, then finely slice

- Clean and chop the ribs into bite-sized pieces, then blanch and rinse with clean water to remove any impurities. Marinate with a pinch of salt, pepper, and seasoning powder for about 20 minutes

- Soak the wood ear mushrooms in water until soft, remove the stems, and finely chop

- Heat some cooking oil in a pot, sauté the chopped shallots until fragrant, add the ribs and stir-fry until firm. Pour in enough water to cover the ribs. Add the tamarind and bring to a boil, skimming off any foam that rises to the surface. Reduce the heat and simmer until the ribs are tender

- While waiting for the ribs to cook, remove the sawtooth herb leaves, cut into bite-sized pieces, and soak in a diluted saltwater solution for about 10 minutes. Due to its itchiness, wear food-safe gloves when handling the sawtooth herb. Squeeze out excess water, blanch the sawtooth herb in a pot of boiling water, then transfer to a plate

Prepare the pork ribs by cutting them into small pieces and marinating them with minced garlic, ground pepper, and soup powder. Shape the mixture into small bite-sized balls.
Place the pork balls into a pot of boiling water. Once they float to the surface, remove them and set aside in a bowl.
Remove the seeds from the tamarind and crush them before adding them back to the pot. Stir well.

Add diced tomatoes to the pot of simmering pork ribs. Season with salt and pepper to taste. Let it simmer until the ribs are tender, then turn off the heat.

Start by adding rice vermicelli to a bowl, followed by the pork ribs and minced meat balls. Add spring onions and cilantro, then pour in the broth. You can also serve it with lime and chili if desired.
