Ingredients (Serves 4)
- Rice: 300g (Opt for Japanese rice or a sticky variety for your sushi)
- Dried seaweed sheets for sushi making: 8-10 sheets
- Mango: 1 piece
- Cucumber: 1 piece
- Carrot: 1 piece
- Fresh parsley, green onions (Just enough)
- Sesame oil: 4-5 teaspoons
- Ingredients for dipping sauce: cream cheese, butter, avocado, fresh chili, black pepper, soup powder (Sufficient, suitable for taste preferences. It's recommended to prepare plenty of dipping sauce for extra flavor with vegetable sushi)

How to Prepare Vegetable Sushi
Step 1:
Cook the rice until done, mix the hot rice with 4-5 teaspoons of sesame oil to enhance the flavor of the rice.
Step 2:
Cucumber: Wash, peel, and thinly slice into long strips
Mango: Wash, peel, and thinly slice. Similarly, carrot should also be thinly sliced.
Fresh parsley, green onions: Wash and cut into 5cm segments

Step 3:
Place a piece of plastic wrap on the sushi mat, then place a sheet of seaweed on top (If you don't have a sushi mat, you can use a cutting board and roll carefully).
Next, spread the rice onto ¾ of the seaweed sheet and add the vegetable ingredients such as cucumber, mango, carrot, green onions, parsley in the middle of the rice (As shown in the image).

When rolling, make sure to roll tightly with your hands to prevent the ingredients from falling out when cutting.
Once rolled, cut into 4-5cm long pieces and arrange on a plate.

Step 4:
Let's make avocado dipping sauce for the vegetable sushi.
Take 1/3 avocado and blend it in a blender. Add a sufficient amount of cream cheese, 1-2 teaspoons of butter, 1-2 teaspoons of soup powder, a pinch of black pepper, 1 deseeded chili pepper, blend until smooth in a blender. You can add additional chili peppers and spices to suit your taste.

The sauce should be thick enough for easy dipping once completed.
