500g Pork Heart
Pork liver 300g
Pork spleen 50g
Mac Khen 1 teaspoon
Fermented rice 4 tablespoons
Shrimp paste 1 teaspoon
Shallots 4 bulbs
Garlic 4 cloves
Turmeric 3 roots (small)
Lemongrass 5 stalks
Chili 3 pieces
Cooking oil 2 tablespoons
Vinegar 80 ml
A pinch of MSG/salt

Step 1: Prepare the ingredients
To expedite the preparation process, you can select and ask the seller to clean the pork heart beforehand. After purchasing, simply eliminate the odor of the pork heart by marinating it with salt and 80ml of vinegar for about 5 minutes.
Then, rinse the pork heart twice with water and use a knife to cut it into small pieces before mincing it finely.
To eliminate the odor of pork liver, soak it in diluted salt water for about 1 - 2 hours, then rinse it with clean water and cut it into thin slices.
When you purchase bitter melon leaves, pick and wash them thoroughly, then stack multiple leaves together, cut them into strips, and finely mince them.
For the lemongrass, discard the other parts and keep the upper portion. Wash it thoroughly, crush it, and finely mince it after cleaning.
Similarly, peel and wash the garlic, then crush and finely mince it.
For the chili peppers, slice them and finely mince them. As for the turmeric, use a spoon to peel it, crush it, and finely mince it.
Lastly, mix the minced lemongrass, garlic, chili peppers, and turmeric together, and pound them evenly until they are well combined.
Toast the Mac Khen in a pan until fragrant, then transfer it to a mortar and pestle to grind it into a fine powder.

Mix minced pork heart, sliced pork liver, minced bitter melon leaves, and the mixture of minced lemongrass, garlic, chili peppers, turmeric, and other spices including: 1 teaspoon MSG, 2 teaspoons salt, 2 tablespoons cooking oil, 1 teaspoon shrimp paste, and 4 tablespoons finely ground fermented rice using a strainer into a pot.
Then, use chopsticks to evenly mix the ingredients and spices until they are well combined and absorbed.

Stir-fry the ingredients over high heat for about 3 minutes until the pork becomes firm. Add 1 liter of filtered water. Mix well and cook for another 3 minutes until the soup boils, then cut the pork kidneys into square pieces and add them to the pot.
Stir well and cook for another 3 minutes until the blood is cooked. Season with more spices to taste, then turn off the heat, sprinkle the toasted and ground Mac Khen into the soup.
