How to Make Flavorful Enoki Mushroom Stir-fry with Nutritious Greens for Dinner
Ingredients:
100g fresh enoki mushrooms
100g sweet greens
60g Young Corn
100g Carrot
Seasoning: salt, sugar, black pepper, oyster sauce, vegetable oil, garlic…

Instructions for Sautéed Enoki Mushrooms with Greens:
- Soak the enoki mushrooms in warm water for about 20 minutes to evenly expand, then remove and rinse thoroughly with cold water several times to remove any dirt. Cut off the mushroom stems, slice them in half, or leave them whole.
- Pick the fresh greens, removing any wilted leaves, and wash them thoroughly.
- Rinse the young corn thoroughly. Wash the carrot and cut it into bite-sized pieces.
- Heat 2 tablespoons of vegetable oil in a pan. Sauté the minced garlic until fragrant. Add the shiitake mushrooms and stir-fry, then add the carrot and young corn. Next, add the greens and season to taste.
- Stir-fry for 3 - 5 minutes until the vegetables are cooked through and soaked in the seasonings. Transfer the sautéed enoki mushrooms with greens to a plate, garnish as desired, and serve with hot rice.
