
1. Ingredients for Marinated Pork Trotters
- Cleaned pork trotters: 1 kg
- Garlic: 1 bulb
- Dried shallots: 2 bulbs
- 3 to 5 horn peppers (depending on taste preference)
- 450 ml fish sauce
- 400 grams sugar
- Seasonings: black pepper, bouillon powder, white salt, vinegar
2. Making Marinated Pork Trotters
Step 1: Boiling the Pork Trotters
- Peel and clean the garlic and shallots, then lightly crush them, leaving them whole.
- Scrape off any hairs from the pork trotters, rub them thoroughly with salt and vinegar, then rinse with water.
- Roll the meat into a round shape, tightly tie it with bamboo sticks or cloth strips.
- Place the meat in a pot, blanch it briefly, then discard the first blanching water. Add fresh water to cover the meat, add dried shallots and a teaspoon of bouillon powder to the pot, blanch for about 25 - 30 minutes, then remove the meat and place it in cold water to cool completely. While boiling, remember to skim off any foam (if any).

Step 2: Boiling the Fish Sauce Mixture
- Pour fish sauce, sugar, and 200ml water into a pot, stir well and bring to a boil for about 2 - 3 minutes.

- Once the mixture cools, add garlic, whole chili peppers, and 1/3 teaspoon of black pepper to the pot.
Step 3: Soaking the Pork Trotters in Fish Sauce
- Prepare a clean glass jar with a lid, sterilize it with boiling water.
- Cut the strings tying the pork trotters and place the meat in the glass jar. Pour the boiled fish sauce mixture into the jar to cover the meat and garlic, arrange the chili peppers around the meat.

- Seal the lid tightly and place it in the refrigerator for 2 - 3 days before serving. When ready to eat, slice the meat thinly and enjoy with rice, noodles, pickles, and fresh vegetables...
3. Important Notes for Making Marinated Pork Trotters
- The longer you marinate, the more flavorful and savory the pork trotters become, but avoid marinating for more than 5 or 6 days as the meat may become overly salty and spoil quickly.
- If making marinated pork trotters during winter, refrigeration during the marinating process is unnecessary. Ensure that all utensils and ingredients are clean and safe.
