Ingredients for making mango sticky rice in a rice cooker:
- 150g glutinous rice
- 1 ripe mango
- Coconut milk

How to make mango sticky rice using a rice cooker:
First, select good quality glutinous rice with white and plump grains, soak the rice for 1 hour (overnight soaking is even better). After soaking, rinse it and put it into the rice cooker, then press the cook button.

Remember, cooking sticky rice in a rice cooker is different from regular rice, you need to measure water properly to make the rice slightly sticky, not mushy or too dry. To ensure even cooking, stir the rice when it boils.
While waiting for the rice to cook, prepare the coconut sauce. If you have ready-made coconut milk, just pour it into a pot and heat it up. Otherwise, you can blend coconut flakes with a blender and strain to get the coconut milk.

After obtaining the coconut sauce, add sugar and stir until the sugar completely dissolves. You can adjust the amount of sugar according to your taste preference.
When the rice cooker switches to the warm setting, wait for an additional 10 minutes before transferring the sticky rice onto a large plate and drizzling it with the freshly boiled coconut sauce. Mix well until the rice absorbs the coconut sauce. Let it soak for about 10-15 minutes.
Make the sauce to pour over the sticky rice. Put a tablespoon of coconut milk in a saucepan, add a bit of sugar and salt. Dissolve tapioca starch or cornstarch and pour into the saucepan, stirring constantly.
Peel and cut the mango into bite-sized pieces to garnish around the plate of sticky rice. You can decorate it in various ways according to your preference. Drizzle the sauce over the surface of the sticky rice, and you'll have an authentic and delicious Thai mango sticky rice.
