I used to be addicted to bubble milk tea, but after hearing about the low-quality milk powders and mediocre tapioca pearls being sold in local markets, I got a bit grossed out! Truth be told, making bubble tea pearls and the trendy creamy cheese jelly to go with bubble tea is not that difficult. Everyone in my family, from kids to parents, loves this dish. So, whenever I have some free time, I make a big batch and store it in the fridge for a safe, budget-friendly, and incredibly delicious treat!
1. How to prepare bubble tea:

Cornstarch: 2 tablespoons
Cocoa powder: 1 tablespoon
Warm boiled water: about half a cup
How to make bubble milk tea pearls:
Mix cornstarch and cocoa powder in a bowl, sift thoroughly, and blend evenly.

Gradually pour hot water into the powdered mixture, stirring until the consistency is smooth and elastic. Be cautious not to make it too dry or sticky, then stop adding water.

Allow the dough mixture to cool slightly, then use your hands to evenly coat it with starch. Begin shaping the bubble pearls.

Shape the dough into small, round bubble pearls, rolling them in starch if they show signs of sticking together (due to adding a bit too much water earlier).

_Boil a pot of water and once it's boiling, add the tapioca pearls and cook for about 3 minutes (depending on the size of the pearls, whether they are small or large). Make sure to add the pearls in one go to ensure even cooking.

_Once the tapioca pearls are cooked, scoop them out and place them in the prepared sugar water. If you're using a sugar water mixture, use room temperature water to dissolve the sugar. It's advisable to make the sugar water slightly sweet, so when combined with milk tea, the tapioca won't be overly bland. If you prefer or are lazy, you can also use plain water.
3. How to make cheesy agar jelly:
- Jelly powder: 1 packet (Note: Make sure it's jelly powder, not agar powder!)
- laughing cow cheese
- white sugar sand
- pure fruit juice for flavor and color: 3 tablespoons (here I'm using passion fruit juice). Extract the juice from passion fruit, strain to remove seeds, store in a bottle in the fridge. It's not only perfect for making this jelly but also a refreshing drink on its own.
Procedure:
_Evenly mix jelly powder with sugar.
_Bring about 500ml of water to boil, and once it's boiling with bubbles forming, gradually add the jelly-sugar mixture, stirring to dissolve.

_Pour in the passion fruit juice and continue stirring thoroughly.
_Cut the cheese into small square pieces and arrange them on a plate. Once the jelly mixture is ready, pour it into the plate (mold).


_After the cheese jelly has completely cooled, store it in the fridge for about 2 hours. Then, take it out and use a knife to cut it into small cubes around the cheese slice. That's how we've completed this amazingly delicious cheese jelly dessert.

With this pearl milk tea pearl making method, you'll have pearls that are both creamy and fragrant, with a delightful chewiness. The cheese jelly can be enjoyed on its own or added to milk tea for a taste just like the ones in the cafes (guaranteed to be 100% cleaner and safer). Ensuring both hygiene and joy, you can store the milk tea and jelly in the fridge for gradual consumption. As for the pearls, if left in the fridge for too long, they may become firm, so it's best to make just enough for immediate use.
