Step 1: Prepare the Broth
Thoroughly clean assorted vegetables, cut carrots into chunks, slice spring onions, remove the stems of shiitake mushrooms. Clean and prepare squid, cut into bite-sized pieces. Rinse shrimp thoroughly.
Add 1 liter of water and clean pork bones into a pot, simmer for 45 minutes to create the broth.
Step 2: Grind the Chilies
Adjust the amount of chili according to your spice tolerance and blend it into a smooth sauce using a blender for the spicy condiment.
For a mild heat, simply add kimchi juice and green chilies to the blender and puree.
For a moderate heat, in addition to the above ingredients, include jalapenos in the blender.
For a spicier kick, add chili powder to the mixture.
After simmering the broth for 45 minutes, add carrots and 2 tablespoons of spicy sauce and cook for 10 minutes until the carrots are tender.
Step 3: Cook the Noodles
After 10 minutes, season the broth according to taste (you can use instant noodle seasoning packets). Once the broth is boiling, turn off the heat and set aside.
Place a portion of noodles into a pot on the stove, then add kimchi, shiitake mushrooms, squid, shrimp, and spring onions into the pot.
