Ingredients
- Pork ear: 1 piece (Approximately 300-500g)
- Rice for making crispy rice: about 1 bowl of rice
- Garlic: 2 bulbs
- Chili peppers: 2 fruits
- Seasonings: soup powder, sugar, pepper, lime leaves (as needed, to taste)
- Herbs: banana leaves, lettuce, mint, cilantro (as needed)
How to make delicious nem thính
Step 1

To make crispy rice, soak the rice in clean water for about 30 minutes, then remove and let it drain.
Put the rice in a hot pan, stir-fry evenly over low heat until the rice turns slightly golden brown, then turn off the heat. Remember to keep the heat low or the rice will burn easily.
Let it cool, then put the rice in a blender, blend until it becomes fine powder. Here's a tip: if you want to make nem thính regularly, you can make a lot of crispy rice, put it in a sealed jar, store it in a dry place, and use it gradually to save time for future cooking.
Step 2
The next step in making nem thính is boiling the meat.

Clean the pig's ear, remove the hair, and wash thoroughly. A little tip to remove the odor is to rub salt and lime on the pig's ear, then rinse thoroughly before boiling.
When boiling, to prevent the pig's ear from turning dark, make sure it is fully submerged in water. Bring to a boil, then simmer over low heat for 10-15 minutes. Remove and soak in cold water to make the ears crispier when eaten. Additionally, you can boil in the morning or at noon and refrigerate until evening to firm up the meat for better taste.
Step 3

Collect and wash fresh vegetables, then drain them.
Clean lime leaves, cut into thin strips.
Peel and chop garlic. Wash and chop chili peppers.
Slice the pig's ear thinly. Put the sliced pig's ear into a large bowl, add 1 teaspoon of soup powder, chopped garlic, chopped chili peppers, and mix well. Let it marinate for 5-7 minutes, meanwhile, you can prepare the fish sauce.

Step 4
Prepare the dipping sauce for nem according to the following ratio: 1 teaspoon fish sauce, 1 teaspoon sugar, 1 teaspoon lime juice, 5 teaspoons water, then add chopped garlic and chili peppers.

Step 5
Once the pig's ear has absorbed the seasonings, add lime leaves and crispy rice, mix well again, then transfer to a plate. Remember to arrange it with fresh herbs and the prepared fish sauce. Additionally, you can enjoy it with rice paper.

And there you have it, the crispy and delicious nem thính is now ready. Making nem thính isn't as difficult as you might think, right? Take the opportunity to make it for your family to enjoy.
